Baingan ka Bhurta (Eggplant Curry)

Ingredients

  • 2 - 4 medium Eggplant
  • 1 tbsp (chopped) Garlic
  • 1 cup Yogurt
  • 1 (chopped) Onions
  • 1/2 tsp Crushed red chili
  • 1 tsp Roasted cumin powde
  • 2 Green chilies
  • 2 tbsp Lemon juice
  • Salt to taste
  • Coal 1
  • Oil 2 tbsp

Method

Step 1

Wrap egg plant with aluminum foil and bake in oven for 10 minutes, till it tenders. Allow the eggplant to cool, peel and mash. Heat oil in a skillet fry onion, then add garlic, saute for few minutes. Add mashed eggplant, crushed red chili, cumin and salt. Mix well and cook for 5 minutes.

Step 2

Add lemon juice, green chilies and chopped coriander. Put everything in yogurt. The baingan ka bhurta is ready to serve. Note: Egg plant can also be roasted over direct flame of gas burner.
