- 1 bag (12 ounces) frozen cherries
- 3/4 cup sugar
- 3/4 cup orange juice
- 3/4 cup brandy (optional)
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 cups vanilla ice cream
- 16 chocolate sandwich cookies, broken into pieces
In a saucepan, combine cherries, sugar, and orange juice. Bring to a simmer over medium heat. Add brandy (if using) and continue simmering until the alcohol burns off, about 2 minutes. In a small bowl, stir together the cornstarch and water. Stir the slurry into cherry mixture and simmer until it thickens, 1 to 2 minutes. Let cool.
Put a small scoop of ice cream in each of 4 parfait glasses. Top with a spoonful or two of the cherry mixture and some cookie pieces. Repeat layering to fill up the glass. Serve immediately.
