Chicken Satay With Marinated Cucumbers2015-01-21

- 1 cup sliced cucumbers
- 1⁄3 cup sliced red onion
- 2 tablespoons sesame ginger dressing
- 1 jar (8 ounces) peanut satay sauce
- 3 tablespoons low-sodium chicken broth
- 2 tablespoons lime juice
- 1 pound boneless, skinless chicken breasts
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- Cooking spray
- 1 tablespoon sesame seeds, toasted
In a small bowl, combine cucumbers, onion, and salad dressing. Cover and chill. In a medium bowl, combine satay sauce, chicken broth, and lime juice. Measure out 2⁄3 cup of the mixture and set aside for serving. The remaining mixture will be used as a baste.
Using a meat mallet or rolling pin, flatten chicken slightly between 2 layers of plastic wrap. Remove plastic wrap. Cut chicken into 2-inch-wide strips. Thread chicken onto 8-inch wooden skewers. Sprinkle with salt and pepper. Coat both sides of chicken with cooking spray.
Heat a grill pan over medium-high heat. Grill skewers 3 minutes on each side, or until done, basting with satay mixture during last 2 minutes of cooking time. Place skewers on a platter and sprinkle with sesame seeds. Serve with reserved 2⁄3 cup satay sauce and cucumber mixture.
